Raw Berry Pie – red, white & guilt-free is a perfect way to celebrate a 4th of July!
This raw berry pie piled high with berries is actually perfect for any day! So go ahead, wow your friends and blend up your very own gluten-free, dairy-free and guilt-free raw berry pie at your next party! Be adventurous and try topping it with other kinds of fruits! It freezes well too and is best served chilled.
“Raw Berry Pie”
Red, White & Guilt-free
Crust
2 cups raw almonds
½ cups pitted mendjool dates
1 tsp. lemon zest
Mix in a food processor. Do not over mix or it will turn into nut butter!
Press into a spring form pan and freeze
Filling
3 cups raw cashews soaked 1 hour
¾ cups fresh lemon juice
¾ cups agave nectar
¾ cups organic raw coconut oil
1 tsp vanilla
Blend in high-speed blender until smooth
Pour over frozen crust and freeze again
Right before serving pile high with berries!
